HONEY CASHEWS

INGREDIENTS:
100g honey
30g butter, melted
1 teaspoon ground cinnamon
750g salted roasted cashews (or unsalted if you prefer)
50g caster sugar (optional)
1 teaspoon ground cinnamon, extra
     
METHOD:
  1. Preheat oven to 160°C.
  2. Line a baking tray with non-stick baking paper.
  3. Combine honey, butter and cinnamon in a bowl. Add cashews and mix well.
  4. Spread the mixture onto the lined tray and bake for 10-15 minutes - or until golden.
  5. Set aside to cool for 20 minutes.
  6. Combine sugar and extra cinnamon in a bowl. Add cooled cashews and toss to coat.
  7. Cool overnight to dry out, then store in an airtight container.
