WHIPPED RICOTTA - SWEET & SAVOURY

Savoury Whipped Ricotta with basil and chives
Storage: Refrigerator 1-2 days
Yield: 2-3 cups
   
Sweet or savoury? Whipped ricotta is delicious served with vegetables or fruit. 
   
SAVOURY WHIPPED RICOTTA
    
INGREDIENTS:
2 cups ricotta
2 tablespoons fresh herbs i.e. thyme, chives
1 lemon
1 teaspoon black pepper  
1/2 teaspoon salt
2 teaspoons extra-virgin olive oil
     
METHOD:
  1. Blend ricotta, herbs, lemon zest, lemon juice, salt and pepper until smooth. 
  2. Drizzle with oil and extra herbs. 
  3. Serve with crunchy vegetable pieces.
    
SWEET WHIPPED RICOTTA
   
INGREDIENTS:
2 cups ricotta
2 tablespoons sugar
3 tablespoons honey
1/2 teaspoon vanilla extract
   
METHOD:
  1. Blend ricotta with sugar, honey and vanilla until smooth. 
  2. Refrigerate for 2 hours. 
  3. Serve with fresh fruit i.e. berries.
