GINGER CORDIAL

Homemade ginger cordial – no artificial ingredients, just a tasty drink to enjoy!
    
Ingredients for Making 8-9 Cups of GINGER CORDIAL
Water (no chlorine)
8 cups
Fresh Ginger, Washed,
Skin-On, Chopped
500g
Fresh Lemon, Washed,
Skin-On, Chopped
300g
Cinnamon Stick
1
Cloves, Whole
3
Sugar
1.3kg
To serve: water (still or carbonated), lemon slices and fresh mint
    
METHOD:
1. Combine ingredients in a large pan. Bring to a boil. 
2. Reduce heat and simmer for 20 minutes. 
3. Strain and cool cordial. Refrigerate (or freeze) in airtight containers. 
4. Serve ginger cordial diluted 1:3 and garnished with lemon slices and fresh mint. 
    i.e. 1 cup cordial + 3 cups water
