SPICED VEGETABLE FRITTERS

MAKES 6
                
Ingredients: 
1 zucchini
1/2 teaspoon salt 
1 carrot
1/3 cup almond meal (or breadcrumbs)
1 egg
100g frozen spinach, thawed
1/2 onion, diced
1/2 tablespoon curry powder
1/2 tablespoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/4 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon ground cinnamon
Oil 
Greek-style yoghurt (recipe HERE)
Fresh mint leaves
Lime wedges
    
Method:
  1. Grate zucchini and sprinkle with salt. Mix well and set aside for 10 minutes.
  2. Grate carrot and squeeze carrot, zucchini and spinach to remove juice. 
  3. Mix vegetables, almond meal, onion, egg and spices in a bowl. 
  4. Heat oil in a pan and fry handfuls of mixture until golden. 
  5. Finish fritters in the oven if required (180°C/350°F). Drain on paper towel before serving.
  6. Stack fritters and serve with a spoonful of yoghurt, mint and a squeeze of lime juice.
