Every Monday I host a private class in the 365 Kitchen. This week we made Raspberry Jam and Raspberry Red Onion Chutney.

Raspberry Jam
A luscious, rich red raspberry jam that you will enjoy using in everything!     Following the traditional jam-making method of fruit and sugar, boiled until setting point, we made a delicious raspberry jam in today's class. Delicious and oh so pretty in the jars, don't you think? My family loves this on toast, and added into bread and butter pudding - with meringue on top, yummy!

Raspberry Red Onion Chutney
A sweet chutney made from raspberries, red onion, balsamic vinegar and brown sugar. Delicious in sandwiches and rolls, in baked savoury goods, or served alongside grilled/roasted chicken, beef or pork. Also beautiful with some soft cheeses on a platter when entertaining. Allow to mellow for 6 weeks or so before serving.    Again we tweaked the original recipe to make our own version of this delicious-sounding chutney. Only had sultanas (golden raisins) though, but I would like to make another batch using dried cranberries or dried cherries next time ....
